Recipe Idea
**Lavender Honey Apricot Tartlets** (for 6 servings)
*Dough*: 250g flour, 125g cold butter, pinch of salt, 60g sugar, 1 egg yolk, 3 tbsp ice water
*Filling*: 100g almond flour, 100g soft butter, 80g lavender honey, 2 eggs, 1 tsp cornstarch, 6 apricots, 180g Greek yogurt
Chill dough 2 hours, prepare almond-honey cream. Bake tartlets at 180°C for 20–25 minutes. Cool, top with yogurt, apricots, and a drizzle of lavender honey.
